“Bar” is a shortened form of “barrier.” In taverns, the bar was the barrier that marked where alcohol was sold. Because alcohol was the most beloved product that taverns offered, it didn't take long for the entire building to become the “bar.” Another popular, but probably untrue, story is that when travelers would sleep at a tavern, the tavern owner would lock down a wooden grill of bars to keep his rum and grog safe.

Bars can be designed "dry" for simple bar setup with no water supply or "wet" to accomodate sinks, hidden refrigeration, dishwashers, etc.
